Why Meslier? Within the region of Champagne Meslier, or Petite Meslier as it is otherwise known, the Meslier grape is used, albeit in small quantities. Prized for it's acidity it gives the sparkling wine a vivaciousness synonymous with the style. Not only does Meslier bring acidity, but also vinosity and delightful light florals to both bouquet and taste. Irvine decided to tirage Meslier completely on its own for a number of reasons, but primarily to find out exactly what the grape could offer when ripened fully and fashioned into a pure Methode Traditionelle.

Great things come in small packages, at only 375ml, tiny little Pink Moscato has become a great big phenomenon. Why? It's the very definition of fun, one of the few indulgences in life which can be relied upon to set the perfect mood, whatever the ocassion and whoever the company. A true Moscato fashioned from the pick of the most succulent Muscat Gordo and Muscat of Hamburg grapes, light in alcohol, fantastically fizzed, brimming with berries and summer fruits, rose petal perfumes and luscious turkish delights.

A lively cépage of Black and Gordo Muscat grown to the Boulton and Duffy, Burge, Wall and Pratt Vineyards at Swan Hill. Early harvest is essential to arrive at a benign level of alcohol, a palate full of flavour, crispy citrus tang and natural fruit sweetness. A scrumptuous wine with an exotic mix of watermelon, musk and rose petal flavours, red apple, hubba bubba and pink ice cream. It's low in alcohol but a single bottle is unlikely to be enough because with a drink this good, there's no excuse for not sharing.

The aromatic French Vidal is the grape of choice for making Canadian Icewine. A long and steady ripener, it has rich, full aromas and flavours balanced by firm acidity. The ripe berries are dehydrated through constant freezing and thawing, a process that concentrates the sugars, acids and extracts, intensifying flavours and developing immense complexity. A noble rot Eiswein grown to the inhospitable climes of Niagara Peninsula, where the fruit is painstakingly hand picked under the most severe conditions. Classic botrytised Riesling characters, elegant citrus flavours of developed limes and grapefruit as well as ripe apricot and peach, followed by a slight mineral edge. Inniskillin Niagara is an outstanding experience, a superb and devastating wine, a gift from mother nature to wine enthusiasts everywhere, traditionally served chilled, alongside the most elegant nibbles and all fine faire.

Since winning the most prestigious of all possible international accolades, the esteemed Grand Prix d'Honneur, Inniskillin's Icewines have been consistently lauded and awarded at wine events everywhere. Cabernet Franc is an unlikely, but interesting candidate for Icewine. It is said that the gloriously sweet, concentrated wines which result from grapes infected by Noble Rot Botrytis Cinerea are indeed a nectar of the gods. Ever since crafting their first botrytised wines, Hollick have developed quite a reputation for this rich style, fashioned exclusively from Coonawarra Riesling grapes grown to the Hollick Wilgha Vineyard. The nose exudes a complex array of fragrances, the luscious palate displays honey, mandarin peel and apricot flavours, moving slowly towards an everlasting finish and cleansing drying acidity.

Despite their enviable international reputation and formidable list of awards, Hollick are a small family vineyard winery at the southern end of the Coonawarra Terra Rossa strip. Champagne Henriot was officially founded in 1808 by Appoline Henriot. She was the niece of the very famous Abbe Godinot, an erudite man who contributed greatly to improvements in viticulture and sparkling winemaking. Brut Souverain is a Champagne full of elegance, lightness and finesse, sublime as aperitif and exquisite through each course of an entire meal. Adam Henkell established himself as a wine merchant in Mainz circa 1832, laying the foundation of today's Henkell & Soehnlein. As early as 1856, Henkell devoted himself to the production of popular sparkling wines. Following the creation of the Henkell Trocken label in the late 19th century, his grandson Otto transformed this delightful, sparkling cuvee into a highly esteemed marque that was enjoyed worldwide. Henkell Trocken has since became one of the great prestige brands, approachable to all, a must at every celebration and social occasion.

Henkell & Sahnlein are one of the world's most renowned sparkling wine producers. Adam Henkell began vinifying fruit at Mainz in 1856. Today Henkell Trocken is one of the world's most popular and approachable sparklers, a vivacious wine with exquisite palate profile and fine effervescence. This pleasingly dry yet flavourful Cuvee owes its elegant character to an elevage of the finest fruit, harvested from both sides of the Franco German border, Chardonnay et Pinot Noir from France and Chenin Blanc from Saumur.

Heggies is an exquisite, though difficult to manage, single vineyard site. The undulating slopes, high in Valley Eden, prevent frosts from settling, such that the unique terroir is encouraged to produce remarkable wines. Fruit is harvested in small, hard won lots, the narrower sections and rows demand to be picked exclusively by hand. A scrupulous sorting is essential, Botrytis affects each bunch of grapes in different ways. The integrity of each parcel is maintained throughout the vinification, ensuring that almost every planting is afforded the opportunity to have a say in the final wine.

Mostly Pinot Meunier with a quarter Chardonnay and smaller portion of Pinot Noir, a third of reserve wines are included in the assemblage. Champagne H.Blin & Cie was established 1947 by respected winemaker, Henri Blin. Today it is a co-operative of more than a hundred growers situated in and around the little village of Vincelles in the Marne Valley. Since 1892 the Great Western wineworks have been home to our nation's most enduring sparkling wine. Fashioned from choice harvests of white Muscat grapes, White Frontignac and Muscat Gordo Blanco, a substantial serving of which are grown at Grant Burge's own Lily Farm Vineyard in the Barossa heartlands. At less than 8% alcohol by volume, this precocious Moscato is bottled early at low temperatures, to retain the naturally occurring carbon dioxide within a mousse of elegant and refined, dulcetly revitalizing bubbles. An astonishingly equitable match to the most sophisticated bouillon broths and consommé.

Lily Farm is the vineyard in front of Grant's house near Tanunda, planted to vine some thirty years ago. Frontignac is a wine that typifies the fruit from which it is made, showing a distinctively, pleasant grape flavour. Frontignanc is unique amongst varietals in that the wine actually tastes and smells of ripe, luscious grapes. Grant Burge make a style of Frontignac that's more generous and engaging, the sweetness of fruit is matched by an adults only complexity, multi dimensional with vivid aromatics and layers of fruit.

The final word in luxury Sparkling by the House of Burge, a slightly larger percentage of Pinot Noir to Chardonnay, assembled from the superior sparkling wine vineyards at Pipers Brook. Grapes are all hand picked and sorted, chilled and whole bunch pressed, treated to the full Methode Traditionnelle and tiraged for optimal effervescence, before sending to cellar in own bottle for an extravagant eight years. A final addition of Liqueurs d'Expedition imparts even greater complexity and introduces the ultimate indulgence of toothsome, palate richness.

An assemblage of old, to very old stocks Muscat à petit grains, patiently matured under the Grant Burge cellars in a selection of well seasoned, larger format oak barrels. Painstakingly aged to the Iberian Solera system, as the batches progress along a virtual conveyer belt, topped up with vintages of fresher Muscat as the angels take their share. A luscious, complex wine with enormous depth of toothsome flavours, ample aged rancio richness, balanced by fresh fruit, for a wine that develops cleanly on an everlasting, moreish finish.

Vinified from the Barossa's traditional Port varietals, mostly Grenache, the balance Mourveprdre and Shiraz, assembled to an average age of ten years. Grant Burge craft their exquisite Old Tawny to the Iberian Solera system, achieving a higher standard of fortified wine year after year. The spicy fruit flavours are delivered by the high proportion Grenache and add a lifted freshness to the more complex rancio characters in the background. The palate is smooth and rich, its moreish opulence is balanced by an elegant, drying finish.
